Coppa
is produced with domestic pork; it is carefully salted with measured amounts
of salt and spices for two weeks, alternating massaging of the meat with rest
periods. It is manually bound with cord. It is one of the most appreciated Parmesan
product.
Coppa is delicious with a thin slice of bread, but it gets along beautifully
also with small artichokes, celery, rocket, kiwi, melon.
