This
is produced from bone-in pork legs over 9 kgs of weight and cured over 12 months.
The deboning is done by extracting the bone from the side whereas the pork fat
trimming is carried out by hand so taht the product is ready for cutting. The
product is then pressed in special moulds and vacuum packed in sheer material
so its appearance can be appreciated .
