from italian pork legs with the bone, over 9 kgs of weight and cured over 12
months. The deboning is carried out by extracting the bone from the side, whereas
the trimming of the pork fat is done by hand with a knife, so that the product
is ready for direct cutting. Then it is tied with plastic so it acquires a round
shape, vacuum packed in a sheer plastic so itas appearance can be appreciated.
