product of ancient Emilia tradition. This roasted pork product is achieved from
loins wrapped with middles, salty, bagged in net and cooked in dry-air oven.
Cuts are cured with salt, sugars, flavours and spices. After one day soaking
in the brine, each loin is wrapped with middles, seasoned with a hint of rosemary,
garlic and pepper put into a net to hold product shape during cooking phase
and to allow a good thermal exchange with hot air. In this way surface is roasted
and acquire typical red colour.
