THE TRACEABILITY
Another goal at the Prosciuttificio San Michele is to guarantee the most transparency as regard to the traceability of the animals selected.
In these recent years our Company has carefully supervised the production line.
We only select the pig farms which can give us the highest guarantees in genetics, feeding and genuineness of the animals.
This also means that the meat must be identified and recorded during the processing cycle.
Our Company is particulary sensitive to this aspect. In a few months a bar code system will be introduced which will unable the Company to keep precise files of data such as: the item number, the date and bill of entry and the weight of the leg.
Using this system we can also trace the leg in every phase of production, from beginning to end.
