Are you looking for an original idea for antipasto, for a snack or for a bite to go with
a good glass of wine at happy hour? Terre Ducali proposes its strolghino di culatello:
a slim deli meat, of sweet and delicate taste which is great cut in thick diagonal
pieces coupled with bread or croutons.
As by tradition, our own strolghino id obtained with the slim trims of the
culatello (heart of the pork leg) coming from the heavy Italian swine, the same used
for the production of the Prosciutto di Parma. The meat is put inside of a very
skinny casing – four centimeters – that accelerate its maturation process. The name
has a curious origin: it comes from the Parmesan local dialect word “strolga”,
which means “footsayer”. The strolghino was in fact used to foresee the
longer maturation of salamis with bigger width. According to another version, given
he difficulty to correctly prepare and mature this salami, in order to obtain a
good strolghino there needed to be a special person, or a “footsayer” as a matter
of fact.
Whatever maybe the origin of the product, the strolghino has to be eaten while
it is still soft. It may be kept at a fresh cellar or in a fridge, avoiding any place
that is too dry.
Terre Ducali is the Italian leader company in the production of the strolghino
di culatello. To its classical version, of 250 gr, we accompany a mini strolghino of
120 gr, which is much appreciated as a quick snack, also packaged in
atmosphere packaging. The bag, which allows to prolong the shelf-life
of the strolghino, is in an innovative biodegradable material, which can be
disposed of in the garbage for organic residues.
